There’s a particular kind of hour we’ve always wanted to design for – the one between leaving your desk and sitting down for dinner. Daylight turning to darkness. The first drink of the night, before you know exactly where it’s going to take you. That’s the hour we’ve built Sips ‘Til Siete for.

Starting now, every day from 5-7pm, we’re running a rotating aperitivo menu of three cocktails at £7 a drink.

How it works
Each week, our Bar Manager Lili Johnston creates three new cocktails for the menu – a short, a long, and a frozen – all served at £7, all only available during the 5-7pm window. The line-up changes weekly, so there’s always something new to catch if you’re in for the early sip.


Walk-ins are always welcome, but if you want to guarantee your table, we’d recommend booking ahead.

Why we built this
We named this bar El Siete – “The Seven” – as a nod to El Colmillo, the cult Mexico City nightclub our founders Sam Hart and Crispin Somerville opened back in the 1990s on Versalles Street. The number seven runs through everything we do here, from our seven best in class margaritas to our seven agave cocktails and seven updated classics on the main menu. Sips ‘Til Siete is just the latest expression of that same idea – built for the in-between hour, not the whole night.

The space
Downstairs beneath El Pastor Soho, our 60-cover room was designed with Macaulay Sinclair, drawing on the brutalist and modernist architecture of Mexico City – with a particular nod to Luis Barragán. Low-slung banquettes, vintage marble tables and poseur stools make it a room that’s just as good for a quick aperitivo as it is for staying until close.


Behind the bar, our cocktail programme was developed with long-time collaborators Giles Looker and Michael Butt of Soulshakers, bringing modern Mexican bartending to Soho. On the backbar, you’ll find around 60 mezcals and tequilas, from raicilla and capón to cacao-laced pechuga.


And on the speakers: cosmic cantina, carefully considered, with a Latin lean. Our playlists are made in partnership with Playlister, plus a rotating series of guest mixes – this season, from DJ Tommy Gold.
