this month we hand the mic to alex, our bar supervisor, on spicy margaritas, chambord espresso martinis and the night the whole team finally clicked. she has strong opinions on mixing your drinks, a very specific order for the end of a shift, and a level of heat tolerance we’d gently advise against matching.
probably the spicy margarita. i always loved a spicy margarita but the ones at El Siete have ruined all others for me, i now won’t order a spicy margarita from anywhere else. i take my spicy at the hottest level (ghost and scorpion) and with extra agave in there.
it was probably an evening i had at satan’s where i didn’t really know what to order so i gave them an admittedly strange brief on what i wanted. an espresso martini, but not with vodka, tequila or rum. not too sweet and just delicious. they delivered a chambord based espresso martini which hit the spot so perfectly!
i think when we all got into our rhythm for the first time. we started off with pretty minimal time in the space before we started in service so the first few days we were all running into each other and no one had the flow of working together yet. the first time we looked around after service and realised that we’d all reached a flow through peaks and we were all working as one team instead of a team of individuals was one of the most memorable moments we’ve had at El Siete!
i don’t think people should bother themselves with mixing drinks as much as they do. i don’t think it gets you drunker when you’re mixing spirits throughout the night. i always recommend that guests try as diverse a range on the menu as they’re willing to!
it changes but at the moment, if i’m out it will be a gin basil smash served up, and if i’ve just finished work, a tapatio 110 tommys and a modelo.
