meet the team – lili, bar manager

we’re kicking off meet the team with none other than lili, our bar manager. if you’ve been to el siete, you’ve met lili. she’s the powerhouse behind the bar, distilling excellence and giving everyone the most memorable time. we caught up with her to ask her the questions you can’t find anywhere else.

if we took one drink off the menu, which would you miss the most?

that’s really tough but probably the uva! i love a margarita format and this one is fortaleza, which is one of my favourite tequilas around, and eiswein, which i was introduced to a few years ago and it’s a go-to for after dinner wine. this drink was love at first sip!!

best experience you’ve ever had in a bar?

i’ve been fortunate enough to have so many incredible experiences in bars. one bar that always overdelivers though is satan’s whiskers. although there’ve been many maaaany evenings spent there, one of them was not long after i went to a talk delivered by them where they discussed frozen banana daiquiris and i’d been craving one since. i asked them about it and they left to go and buy bananas and made the drink. it truly hit the spot.

most memorable moment you’ve had in el siete?

being only a few months in, there are still so many firsts we’re getting to experience at el siete which are so memorable. some standouts have been getting to do our first takeover with cointreau, and also each time someone comes close to knocking our popcorn bowls per person record out (current record is 15 bowls for one person, i will admit, it’s held by me).

your bartending hot take?

clarification has a time and a place and it’s not everything and everywhere. if clarifying a drink is adding something to the final drink or the drinking experience, go for it, but we don’t need an entire menu to be clarified and carbonated. bring back a range of textures and styles of drinking!

go-to drink when you’re off the clock?

varies a lot based on mood. a dry gin martini with a twist is always great. if i’m really treating myself i’ll have a miami vice, and if it’s a post-work drink, a pacifico and a shot of some sort of agave (i like to mix up the shot). if it’s the end of the week though, the beer and shot moves to a happy meal with the addition of a marg.
